This is a simple, quick recipe for making shortbread cookies.
You only need 3 ingredients.
Anyone can make them and no more excuses for not cooking!
100g icing sugar
100 g flour and 100g white sugar to make the dough
Beat the butter and icing sugar on medium speed until light and fluffy. While continuing to beat the mixture, add flour until the mixture has a sandy like texture. Place the dough on a clean surface. Knead the dough until firm.
Shape the dough into an elongated cube. Place it on wax paper and sprinkle it with white sugar rolling it inside the wax paper. Once the pastry is held together by the sugar, place it on cellophane paper and put it in the fridge for about 30 minutes.
Take out the pastry and cut 1cm thick thin slices and place them on a baking tray covered with baking paper. Preheat the oven to 165 o C and bake your cookies for 20 minutes or until they become slightly golden.
